Vegan Sub Sandwich

Do you ever just miss a good deli sandwich from Jersey Mikes or even Subway? If so,  you are not alone. This isn't so much recipe but a list of vegan deli meats that pair amazingly well for a classic sub sandwich. A lot of people get frightened at the thought of eating vegan “turkey” and just avoid them all together. Trust me when I say that pairing all of these together will crush your cravings for meat based sandwiches.


Ingredients:

  • Ciabatta bread 

  • Oil & Vinegar 

  • Pepper

  • Mustard 

  • Shredded lettuce

  • Pepperoncini 

  • Tomato 

  • Vegan Mayonaise / or Spicy vegan Mayonaise (I used Follow Your Heart)

  • Vegan Turkey (I used Whole Foods branch but also love Tofurky)

  • Vegan Bacon (I used Sweet Earth)

  • Vegan cheese (I prefer Follow your heart slices)


First things first, nothing screams a deli sub sandwich like thick bread, mustard, mayo, Pepperoncini, shredded lettuce, oil, vinegar AND pepper. I made sure to get shredded lettuce and I prefer red wine vinegar, so that is what I personally used. Of course, you can add anything you want. Next, is determining what type of vegan deli meats you prefer. These are what I preferably think are the best and most affordable:

  • 365 (whole food brand) Turkey $2.99

  • Sweet Earth Bacon $3.99

If you don't have a whole foods near you sprouts and Walmart both carry Sweet Earth Bacon and instead of whole foods branded turkey they carry Tofurkeys Hickory Deli slices (also amazing). Please note that Tofurkey Hickory Slices range in different prices depending on where you purchase. Walmart is $2.88, Target and Sprouts are $3.29 and last but not least the most expensive is found at Vons for a whopping $4.29. Note: lets try to avoid Vons since they outrageously spike the prices on all vegan items. 

After you got all your ingredients its time to assemble your sandwich and you are good to go! Note: sweet earth bacon tastes extra yummy when you grill it for a couple minutes. I wrapped the sub sandwiches in parchment paper and twine to keep them in tacked for a trip to my friends house. Its also an adorable way to pack them for a picnic! ENJOY!
