Vegan Street Corn (tasty snack)
Do you have a cupboard full of canned corn and have no idea what to use them for other than a blan side to your dinner or in a big bowl of chili? I am here to help you eat them with a tasty delicious snack.
Prep Time 10 minutes (serves 1-2)
Ingredients:
1 can of 15.25oz (432g) corn
1/4 cup of vegan mayonnaise
1 tsp vegan butter or vegetable oil (if you like to cook oil free you don’t need this)
half of 1/4 tsp pepper
salt to taste
1 lime
1/4 tsp of chili lime seasoning or Tajin (+ additional for topping)
Dairy free feta crumbles (highly recommend Follow Your Heart)
Lets get started on this simple and quick snack!
Step 1: Drain and rinse the corn. With a towel pat the corn dry to soak up the excess moisture before cooking.
Step 2: Add vegan butter or cooking oil to a pan on medium heat.
Step 3: Add the corn kernels to the pan and cook on medium heat for 3 minutes. Stir occasionally.
Step 4: After the corn is fully cooked for 3 minutes drop the heat to low (level 2). Add the mayonnaise and pepper.
Step 5: Stir in the mayonnaise with a spatula and let it cook for 1 more minute to ensure everything is warmed up.
Step 6: Turn the heat off and while still in the pan add the chili lime seasoning (or tajin) and salt to taste. Stir until everything is combined.
Step 6: Pour your corn mixture into a bowl and top it fresh lime, additional chili lime seasoning and a whole lot of feta.
I do not want to recommend how much feta to use because this is dependent on your taste for cheese. I personally use half of a 1/4 cup and stir everything together.
You probably noticed that I didn’t use cilantro. This is because I am one of the few who hate it (I know its a sin); but feel free to add some if you’d like.
