This easy and tasty idea is great for meal preps, busy schedules or just a healthier snack! The ingredients are minimal and given that its a snack idea- this is less of a recipe with measurements and more of a “to taste” situation. Lets get started!

What you’ll need for the pin wheel wrap:

  • Tortilla

  • Lettuce of choice

  • Tofurkey Hickory Smoked Deli Slices

  • Cucumber

  • Red Onion

  • Balsamic

  • Mustard

  • Pepper

What you’ll need for the side:

  • Hummus of choice

  • Crackers (I used Trader Joe’s sweet potato crackers- they pair so well together and I highly recommend)

I bought each of my ingredients at Trader Joe’s which makes this so much easier on you; as you can find all the ingredients in one spot.

Please note that my final images of the food show pickles in the wrap, this is because I forgot the cucumber at the market- of course! Nevertheless, it is meant to be cucumber and I still recommend using cucumber over pickles (or maybe even both).

Feel free to mix it up or swap any of the ingredients out to fit your preference. I am simply here to provide you with this idea and you can re create it however you’d like :) For example, if you aren’t a fan of mustard opt it out for vegan mayonnaise. If you want to add more veggies- go crazy! I kept it simple due to the fact that this is my meal prep snack for my busy schedule and these are the ingredients I tend to have on-hand 24/7.


Step 1: Slice your preferred amount of cucumber and red onion.

Note: It is important to only place your spreads and toppings on half of the tortilla. If you cover the whole tortilla and start rolling it into the wrap, most of the food just pops out and the mustard will be leaking everywhere.

Step 2: Spread the mustard onto the tortilla and top it with the lettuce, cucumber, vegan turkey (I use 5-6 slices), red onion, pepper and balsamic.

Step 4: Roll it.

Step 5: Take a knife and cut down the wrap in equal parts (creating bite size bill wheels) and place them flat in your Tupperware or plate. They will be a little loose but when you put them side by side it holds them in place; or you can use a toothpick to hold them together. I also like to drizzle additional balsamic on the top.

Step 6: Add your hummus and crackers on the other side of your wrap! If this is a meal prep, like mine.. use a piece of lettuce to separate the hummus from the wrap to avoid it getting soggy over night. I am constantly thinking of little hacks like this to keep my food fresh!
