If you’re looking for a thoughtful Valentine’s Day gift for your loved one or just wanna treat yo damn self.. these are perfect!! These are not just your basic chocolate covered strawberries but they are infused with bursts of lavender. You can also swap the lavender with rose syrup.


What you’ll need:

  • 2 plastic containers of fresh strawberries (mine were 16oz)

  • 9 oz bag of vegan chocolate chips (I used “Enjoy Life” Dark Chocolate Morsels)

  • 1/4 cup of Lavender Syrup (I used Pink House Alchemy)

Other things you’ll need:

  • Parchment paper

  • Rubber spatula

  • Small pot

  • Large heat safe glass bowl (must fit on top of the pot)

  • Tooth picks or bamboo skewer sticks (optional for easier dipping)

Blue bag of dark chocolate chips, shiny glass bottle of lavender syrup and large juicy red strawberries with bright green stems.

Step 1: Boil water in the small pot. Once the water is bubbling turn the heat to the lowest setting and place the heat resistant bowl on top of the bot, as shown in the image. The boiling water should NOT hit the bowl, as we are only using this method to create heat from the boiling water. Refer to my image with my finger in the pot so you can gage how much water is needed (my pot may not be the same size as yours which is why I’m not providing water measurements). The boiling water will steam upwards hitting the bottom of the bowl, thus melting the chocolate.

  • It is important to keep your heat on the lowest setting. If your front burners are stronger than the back... use the back. The reason being, if it’s too hot the consistency will harden and become chunky/cake-like.


Step 2: Pour the whole bag of chocolate into the glass bowl and let it warm up. Stir occasionally with the rubber spatula until all of the chocolate is melted. While it is melting on slow you can set up everything else. 

Step 3: Place parchment paper onto a plate that will fit the strawberries. 

Step 4: Pour the lavender syrup into a small bowl. 

Step 5: If you have tooth picks or bamboo skewer sticks, stick them into the top of the strawberries. Only use about 5 sticks and rotate them. This step is optional but allows for easier dipping. 

Step 6: Now that the chocolate is melted, dip a strawberry into the chocolate and then directly into the lavender syrup. 

  • It is important to note that doing it in this pattern is crucial. If the lavender syrup touches the melted chocolate first, the chocolate will thicken and turn into a cake consistency.

Step 7: If you want to mix it up, you can dip the strawberry first into the syrup, take a spoonful of chocolate, and drizzle it on top creating lines. I find that this way is a lot better because it keeps the lavender flavor more prominent.

Step 8. Place the first chocolate covered strawberry onto the parchment paper. 

Step 9: Continue steps 6-8 until strawberries are all finished. 

Step 10: Once complete place the plate of strawberries into the fridge and let cool for 2-3 hours.
