I bet you’re wondering, Doritos? how are those vegan? Good question!! Fortunately for vegans, the sweet chili Doritos are accidentally vegan. They do not contain in animal ingredients or animal derived food coloring (to current date). It is important to remember that I live in the U.S so ingredients could vary based on where you live and can change down the road. You can also do a simply google search to confirm if they are accidentally vegan.

The best part about this is that you can alter any of the ingredients to your own preference! This is basically a taco casserole that could be eaten on its own or as a dip.

To sauté:

  • 1 tbs of vegetable oil

  • 8 oz vegan ground beef

  • 1/3 cup of onion

  • 1/3 cup red bell pepper

  • 1/4 cup vegan sour cream

  • 1 tbs taco season

  • 1 tsp garlic power

Other Ingredients:

  • 1 can of black beans

  • 1 can of refried beans

  • 1 1/2 cup of cooked Spanish rice

Toppings:

  • Sweet Chili Doritos (scroll down for image)

  • Diced Green onion

  • Diced tomato

  • Vegan cheese

Step 1: Add the oil, onion, bell pepper, vegan beef crumbles to a pan and cook on medium heat for 5 minutes. After 2 minutes of cooking add the taco seasoning and garlic powder.

Step 2: Turn the heat off after 5 minutes of sautéing (or until the beef crumbles are fully cooked) and add the sour cream. Stir until everything is combined. 

Step 3: Turn the oven on to 375 degrees while you assemble the rest of the dish. 

Step 4: Add a small splash of oil to the bottom of a baking dish and now it is time to layer casserole. This does not have to be any specific order; but, here is how I chose to do it

  • Refried beans

  • Cheese

  • Pre cooked Spanish rice

  • Black beans

  • Cooked meat mixture

  • Cheese

Step 5: After creating those layers; you will now want to crumble the Doritos across the top of the casserole dish and add additional cheese on top. 

Step 6: Place the dish into the oven and cook for approximately 11 minutes. As everyone’s ovens are different treat this time with a grain of salt and just keep checking on the dish. You’ll want to pull it out before the chips are burnt & once cheese is melted.

Step 7: Once you casserole is done baking to your preference top it with diced green onion and tomato. You can also switch these toppings out and use any other ingredients of choice or drizzle sour cream on top.

These are sooooo tasty and make for a perfect bite to eat when you have guests over. You can dive into it with a fork or just add extra chips around the casserole and use them as a dip, which is what I did.
