Vegan BBQ Pulled “Pork” Sandwich

Looking for another Super Bowl idea? These pulled “pork” sandwiches are perfect for it! You can even make baby sliders with this delicious recipe! I promise that even a non-vegan would love these. Lets dive right into it!!

This recipe makes 4 sandwiches but if you’d like more just double all ingredients

Ingredients for the coleslaw:

  • 9 oz. pre packaged coleslaw mixture (or shredded green cabbage, red cabbage and carrot)

  • 1/2 tbs + 1/2 tsp bbq rub seasoning

  • 1/4 cup of vegan mayonnaise

  • 2 tbs of apple cider vinegar

Ingredients for the pulled “pork:”

  • 4 Hamburger buns

  • 1 full can of jackfruit brine

  • 1 1/4 cup of bbq sauce

  • 1 tbs vegetable oil

  • Smoked paprika to taste

  • Black Pepper to taste


Step 1: Combine the coleslaw mixture of shredded green/red cabbage, carrots, vegan mayonnaise, apple cider vinegar and bbq rub seasoning. Stir until evenly coated. Place this mixture in the fridge to let sit.

Step 2: Drain, rinse and pat dry the jackfruit. Make sure your hands are clean and break a part the jackfruit (before cooking) into tiny pieces. 

Step 3: Turn the stove on to medium heat, add the vegetable oil and the jackfruit to the pan. 

Step 4: Cook the jackfruit for 8 minutes on medium heat. 

Step 5: Drop the heat down to low and add smoked paprika and black pepper to taste (just a dash), stir.

Step 6: Add the BBQ sauce and stir everything together until the jackfruit is evenly coated.

Step 7: Turn the heat back up to medium and let the bbq covered jackfruit cook for an additional 5 minutes. 

Step 8: This step is optional but you can warm your hamburger buns on top of the stove or in a mini toaster. 

Step 9: Assemble your sandwich with the coleslaw mixture on the bottom and add your bbq jackfruit on top. VIOLA!
