These vegan tater tot skewers make a delicious snack idea! They make an even better Super Bowl snack :) The best part about this recipe is that you can mix and match to any ingredients you want. You can even toss the skewer sticks out and just make a tater tot bake/casserole instead! 

Crispy tater tots on bamboo skewer sticks; baked with a golden outer crisp. These crispy tater tots are topped with vegan soyrizo crumbles, diced green onions and melted cheddar cheese.

What you’ll need: 

  • Bamboo skewer sticks

  • Baking sheet or baking dish

Ingredients:

  • 1 store bought bag of Tater tots

  • 1/2 cup of diced green onion

  • 1 1/4 cup of vegan cheese shreds (that melts)

  • 1 1/4 cup vegan soyrizo

  • 1/2 tsp vegetable oil (for the soyrizo)

  • Vegan nacho cheese (optional- you can grab Trader Joe’s cashew nacho cheese or Siete brand)

  • Smoked Paprika to taste (optional)

Other ingredients you can use or add/replace with the above list: 

  • Vegan bacon

  • Vegan beef crumbles

  • Olives

  • Jalapeño

  • Red onion


Step 1: If you are using bamboo skewer sticks it is important to soak them in water for 30 minutes before putting them in the oven. This ensures they won’t catch fire. If you are not using skewer sticks, skip this step. 

Step 2: Bake the tater tots according to the instructions on the back of the bag (we are not using the skewer sticks until step five). 

Crispy soyrizo crumbles charred and broken into tiny little pieces.

Step 3: While tater tots are baking; turn the stove to medium heat, add vegetable oil and vegan soyrizo. 

Step 4: Cook the soyrizo for 5 minutes or until charred. During this process the soyrizo will likely be sticking together making it hard to break a part but after 1-2 minutes it should become easier as it becomes charred and more cooked. Continue to break the pieces a part until into tiny crumbles. 

Step 5: Once the tater tots are done baking, pull them out and let them cool off for a couple minutes before assembling them onto the skewer sticks. Do NOT turn the oven off, we are not finished with it just yet. 

Step 6: Dry off the skewer sticks from the water they were soaking in and add 4-5 tots to each stick. Carefully place them back onto the baking sheet.

  • If you chose to make a tater tot casserole opposed to skewers then simply add some oil to the bottom of a baking dish, line up the tater tots along the bottom and stack them up.

Step 7: Top your tater tot skewers or tater tot bake with the shredded vegan cheese, soyrizo crumbles, vegan nacho cheese (optional), green onion and a dash of smoked paprika (optional).

Step 8: Place the tray back into the oven and continue cooking until the cheese is melted. To make this process faster you can add some foil to to the top of the tray or you can turn on the broiler. If you choose to turn your oven broiler on; be sure to monitor the food so it doesn’t catch fire, burn or ruin your tasty meal. 


VIOLA! Now you’re done! These are so tasty and perfect for a Super Bowl snack. Here are the final products with the skewers or if you choose a casserole bake:
