Vegan Croissant French Toast (with JUST EGG)


French toast used to be my favorite before going vegan. I was never able to master it without egg. That is, until JUST EGG became the perfect vegan egg alternative. I promise you these taste like you are getting brunch at a delicious vegan restaurant!

First things first, this recipe calls for Just Egg and Croissant Vegan Toast; both of which are found at Whole Foods. If you cannot get the Croissant toast then you’ll need to search for a thick bread that will hold up for french toast like dairy free brioche bread. But, I promise you… you’ll want this bread not only for this recipe but to change your life for the better :) Here are photos of the “Just Egg” and Croissant toast found at Whole Foods:

Note - The vegan egg tends to be in the vegan fridge section and at my local whole foods the croissant toast was in the bakery section. La Boulangerie is not a full vegan company; so be careful when looking at the packages. The vegan version clearly states “vegan” on the front and the green color on the package will make it hard to miss. Be sure to snap photos of the above images so you can ask for help if you have trouble find them.

Step 1: Mix the vegan egg, non-dairy milk, cinnamon and vanilla extract into a bowl. The cinnamon will likely gather in one section of the bowl; so be sure to mix it well. I like to use a frother to ensure it is mixed thoroughly (just a tip).

Step 2: Place your bread in the mixture and move it around to make sure you coat it evenly. Do this to each side.

Step 3: Start with 1/2 tsp of vegan butter on your pan (coconut oil is a good alternative) and turn the heat up to medium. If only two slices of bread fit on the pan save the rest of the butter for the next round.

Step 4: I let each side of the bread to cook for 2-3 minutes on medium heat. It is important to remember that the duration of cooking each slice is dependent on your stove stop or which pan you are using. For this reason, you need to rely on visuals. Once your bread turns golden and brown- it is ready to be flipped.

Step 5: Continue this method if you couldn’t fit all 4 slices on the pan at once (like me) and add an additional 1/2 tsp of vegan butter to re-start the heating process.

If you don’t have pre-sliced almonds you can toss whole almonds into a plastic bag and crush them with a cup; a food processor will also work.
