Buffalo Jackfruit Naan Wraps (w/Ranch)
This recipe is so freaking delicious I honestly have no words to describe how tasty it is. I am going to share an easy vegan ranch recipe along with how to make the best buffalo jackfruit to build your naan wrap!
INGREDIENTS (serves 4 with five inch naan bread)
For The Ranch Spread (makes enough for 4 wraps):
1 cup of vegan mayonnaise
1 tbs apple cider vinegar
1 tbs onion powder
1 tbs garlic powder
1/2 tsp black pepper
1/4 tsp salt
Half 1/3 cup of fresh dill (chopped)
For The Buffalo Jackfruit:
1 can of jackfruit
1 tbs vegetable oil (or vegan butter)
1/3 cup white or red onion
1/2 tsp garlic powder
1/2 tsp black pepper (or less if you don’t like this much pepper)
1 tbs Buffalo sauce (pre cook)
Half of 1/4 cup Buffalo sauce (after cooked)
Other Ingredients:
Naan bread (I used Trader Joe’s Indian bread which are about 5 inches in length). If you cannot find Naan you can also use a thick flatbread or pita bread.
Handful of arugula or spinach
For The Vegan Ranch Spread:
Step 1: Combine all the ingredients into a bowl or food processor and mix until everything is combined.
DONE!
For Buffalo Jackfruit + Naan Assemble:
Step 1: Drain rinse and pat dry the jackfruit. Place it in a bowl and shred it into pieces with your hands. A lot of people do this while it’s cooking but I feel it works better prior to cooking.
Step 2: Mix in the black pepper, only 1tbs of Buffalo sauce and garlic powder to the bowl of jackfruit. Use a spoon to to combine all ingredients and ensure the jackfruit is coated evenly.
Step 3: Add vegetable oil, onion and jackfruit mixture to a pan (or pot) on medium heat. The total cook time of the jackfruit is 9 minutes.
You do not have to stir too often as it won’t grill as easily when you keep moving it around. We want the edges to get crispy. I recommend letting it cook for 4-5 minutes without stirring to let the edges burn a little; then stir it and cook for the remaining time.
Step 4: Pour the cooked jackfruit mixture into a bowl and let it cool down for approx. two minutes.
Step 5: Pour half of a 1/4 cup buffalo sauce into the bowl and stir it up with a spoon. Be sure to coat the jackfruit evenly. If you feel this is too much buffalo sauce for your taste then you can cut this in half and use the desired amount.
Step 6: Warm up your naan bread for 10-15 seconds in the microwave so that it bends easily without breaking, to form a taco shape.
Step 7: Spread the ranch evenly onto the bread and add desired amount of arugula (or spinach).
Step 6: Add the jackfruit on top and viola! We are done.
