What I eat In a day (veganuary week one)
Hello everyone! I know this is not a normal topic for a blogger and is more in YouTube realm. However, given that I am dedicating January to content for Veganuary to help those who are not yet vegan or just joining the challenge; I thought it would be helpful to show what I eat for two days. These are not full blown recipes but instead just some insight on what a vegan eats in a day. Hopefully this will give you some ideas on what to eat!
I should mention a disclaimer that I am not a health nutritionist, I do not count calories nor do I avoid carbs. I am a firm believer in following what your body wants. Just because this is what I eat in a day does not mean you need to follow it. I am simply sharing to help you on your Veganuary Journey!
Even after being vegan for nearly five years I draw blanks and cant figure out what to eat. That’s why I always find these helpful.
DAY 1:
Breakfast:
For breakfast I had a bagel on Daves Bread around 9:00am. I actually get common questions on bread; It seems that people tend to believe that It is not vegan. The short answer is, not all bread has dairy. Just be sure to check the ingredients- I used Dave’s Killer bread.
On one half I spread hummus, with chili flakes, dill and pepper; while the other have is vegan butter (follow your heart) and everything but the bagel seasoning.
Snacks:
Since the bagel filled me up I had a pre lunch snack around 12:00pm. I had mini apples, drizzled with warm peanut butter/maple sauce. I basically combined peanut butter, cinnamon and maple syrup and warmed it up (microwave); then drizzled it on top and around 1:00pm I had a Peanut butter macro bar.
I work remote and my job entails a lot of focus and I lose track of time. So pay no mind to the random hours that don’t line up with an actual breakfast, lunch, dinner time frame lol.
Lunch:
For lunch a late lunch (2:00pm) I had a Turkey Wrap which I cut into pinwheels. I actually just posted a recipe for this meal prep idea and its perfect of busy people; as it holds up well in the fridge (even the crackers).

Dinner:
For dinner around 6:00pm I had Impossible Meat. I shaped the vegan beef into patties and grilled them beside a tomato (until charred). I ate three of these- on a bed of rice with A1 sauce. I made a side salad with arugula and Italian dressing. FUN FACT A1 steak sauce is accidentally vegan (depending on the brand). This is a perfect way to mock the steak flavor with vegan beef.
That is basically it for day 1. My portions and food intake may not be fitting for everyone; therefore, you may need to eat more or less. Ideally I’d like to eat at more appropriate times with bigger lunches, but realistically there are days I don’t have time.
DAY 2

For lunch around 1:00pm I had a chipotle taco bowl! This recipe is so easy and delicious. It is also one of my go-to meal preps. I have a full recipe written below.

I hope some of these snacks and meals helped you get inspired for Veganuary. Its important to remember your meals don’t always need to be fancy while eating vegan. Your meals also don’t need to be far off from what you eat with a meat based diet. You only have to make slight altercations to fit a plant based diet.
