Refreshing Roasted Red Pepper & Hummus Toast (easy snack)
I used to go to a coffee shop very often that had no vegan options. They had one specific toast that was very similar to this except… you know that thing that us vegans do where we find 5 items on the menu that are vegan and re create something on the menu into something completely new? Yeah, thats how I figured out this creation haha. I am glad I did because I would have never thought of this combo otherwise and its one of my go-to snacks.
What you’ll need:
Hummus of choice (vegan- most are)
Slice of bread
Handful of Arugula
Canned fire roasted peppers
White vinegar (optional to massage the arugula)
Balsamic vinegar
Chili flakes
Black Pepper
Tips: Choose thicker bread options like sourdough or ciabatta. The reason for this is that you are adding not only hummus but roasted bell peppers that tend to add more weight to the bread and it wont break a part. If you want to be healthier regular bread will work too just don’t let sit and get soggy, eat it right away :) If you don’t like arugula then spinach is also a good option. You can also take it to the next level and add some vegan feta or mozzarella on top.
Step 1: Toast your bread.
Step 2: Massage white vinegar into the arugula with your hands. This is going to give it a more refreshing flavor but is completely optional.
Step 3: Spread the hummus on the bread. Add the roasted red pepper and then the arugula.
Step 4: Drizzle the balsamic vinaigrette, black pepper and red chili flakes over the top.
That’s it! This is an easy and refreshing snack and you can swap out any of ingredients or even turn it into a sandwich.
