Vegan Cucumber Feta Salad
This is such an easy, refreshing spring and summer snack. I randomly mixed up a bunch of ingredients on a very hot day and it turned into this amazing dish!! It is also very versatile and you can swap out any ingredients for those that you prefer; as long as you have the feta, dill and white wine vinegar.
Ingredients:
9 radishes (or one cup of sliced radishes)
1 lime
1 cup and 1/2 cup of cucumber
1/4 cup diced red onion
1/4 cup white wine vinegar
1/4 cup of roughly chopped dill (more or less on your taste)
Vegan Feta to taste
Black Pepper to taste
other ingredients you can add that would pair well are grape tomatoes or red bell pepper.
You can pair this dish by itself as a refreshing side salad; but they are also delicious on top of Trader Joe’s Jicama Wraps, on crackers, naan or topped on a bed of kale.
Step by Step
Step 1: Slice the radish in multiple pieces. I used six pieces of radish which equaled one cup
Step 2: Dice the cucumbers, onion and dill.
Step 3: Toss all of the diced ingredients into a bowl, along with the white wine vinegar, lime and pepper to taste. Stir and combine all ingredients.
Step 4: Crumble as much vegan feta on top as needed (I used Violalife feta).
Step 5: You can eat it as is but it’s better to wait 20 minutes and leave it in the fridge.
Note: it’s best to eat within 1-2 days of making
Here are two ways that I love pairing this dish with!
Putting the leftovers on top of crackers make for the best snack! I also add balsamic glaze on top.
My second creative way to use this dish is on top of the Jicama Wraps from Trader Joe’s. This is how I originally created this cucumber salad.. I purchased these Jicama wraps from Trader' Joe’s and had noooo idea what to use them for. I could not bare to put actual cooked food on them so I added this mixture and its the best!!
